Turmeric Roasted Cauliflower Pita with Guacamole and BBQ Crisppeas

Ingredients:

  • 4 kosher pita breads 🥙
  • 1 medium head cauliflower, cut into florets 
  • 2 tablespoons olive oil 🫒
  • 1 teaspoon turmeric 💛
  • Salt and pepper to taste
  • 2 ripe avocados  🥑 🥑
  • 1 lime, juiced 🍋
  • Salt and pepper to taste
  • 1/2 cup tahini sauce
  • 1 can BBQ-flavored Crisppeas

Instructions:

Roast the Cauliflower: Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, turmeric, salt, and pepper until well coated. Spread the cauliflower on a baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway through, until golden brown and tender.
Prepare the Avocado Crema: While the cauliflower is roasting, make the avocado crema. In a bowl, mash the avocados with lime juice, salt, and pepper until smooth and creamy.
Warm the Pita Bread: Warm the pita breads in the oven for the last 5 minutes of the cauliflower roasting time, or until they are soft and pliable.
Assemble the Pitas: Spread a generous layer of avocado crema on each warm pita bread. Top with a portion of the roasted turmeric cauliflower.
Add the Toppings: Drizzle with tahini sauce and sprinkle BBQ-flavored Crisppeas over the top for added crunch and flavor.
