Natural Tomato Soup with Crisppeas

Homemade Tomato Soup ❤️

Ingredients:

  • 2 tablespoons olive oil  🫒
  • 1 onion, finely chopped 🧅
  • 2 cloves garlic, minced 🧄
  • 1 carrot, diced 🥕
  • 1 celery stalk, diced 
  • 4 cups ripe tomatoes, 🍅
  • 2 tablespoons tomato paste 🥫
  • 4 cups vegetable broth 🍲
  • Salt and pepper to taste 🧂
  • Fresh basil, chopped 🌿
  • Crisppeas roasted chickpeas for topping 🧡
Directions:
  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent. Add carrot and celery, and cook for another 5 minutes until softened.
  2. Add Tomatoes: Stir in the chopped tomatoes and tomato paste. Cook for a few minutes, then pour in the vegetable broth.
  3. Simmer: Bring the mixture to a boil, then reduce heat and let it simmer for 20-30 minutes, or until all vegetables are tender and the flavors have melded together.
  4. Blend: Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender in batches.
  5. Season: Return the soup to the pot (if blended in a blender). Season with salt, pepper, and sugar if using. Let it simmer for an additional 5 minutes.
  6. Serve: Ladle the soup into bowls, top each with a generous amount of Crisppeas roasted chickpeas, and sprinkle with fresh basil.
